Surprised this worked! Chickpea almond salad made with tahini instead of mayo. Splash of apple cider vinegar made it taste like tuna or chicken salad. A few raisins and diced apple add flavor pops. A big scoop makes a great lunch or breakfast or if on the go pack into a Tumaros wrap 6 gm net carb
Peanut sauced shirataki noodles with edamame and carrot: a favorite recipe with my clients with diabetes. Shirataki (konjac) japanese noodles are very low carb and quick & easy prep 👍

I’ve learned that to make homemade sushi taste good, each component has to taste good, especially the rice 🍚 And no lie it’s hard - I think it’s pure luck when I get the perfect rice texture and flavor. This idaho maki has marinated tempeh and my easy shortcut of sweet potato fries ☺️
