Protein-Packed Easy Vegan Chili

March 11, 2016September 20, 2017Leave a comment

I know some people pride themselves on avoiding processed stuff and using only foods in their most natural and whole state. I wish I could be like that but I'm not, at least not yet. Maybe when I've retired, have my dream kitchen built and have a flourishing garden in the backyard. Sure there are … Continue reading Protein-Packed Easy Vegan Chili

Black Rice with Edamame, Sweet Potato and Cashews

March 11, 2016March 17, 2016Leave a comment

Have you checked out the whole grains section of your supermarket? No more will you only see brown or white rice, but quinoa, millet, farro, freekeh and even black rice. My Asian parents have mentioned black rice but never cooked with it because of the higher cost. This black-purplish rice is also called "forbidden rice" … Continue reading Black Rice with Edamame, Sweet Potato and Cashews

Quick and Easy Granola Bars

If I can take any kind of shortcut with cooking, I will find it! So when I say these bars are quick and easy, you can trust they are. This recipe has four ingredients and needs only a saucepan and baking dish. Goes into the oven for about 20 minutes. I eat a packaged granola … Continue reading Quick and Easy Granola Bars

Broccoli Carrot Apple Salad with Honey Toasted Walnuts

March 11, 2016March 16, 2016Leave a comment

I've fallen in love with this broccoli salad dish that incorporates honey toasted walnuts. I heat some olive oil and honey in a pan on medium-high heat and add 1/2 cup chopped walnuts, stirring the mixture until the sauce thickens and the walnuts brown. I then toss some broccoli florets into boiling water for a … Continue reading Broccoli Carrot Apple Salad with Honey Toasted Walnuts

Nuts Over Coconut: Is It Really Heart Healthy?

March 10, 2016April 18, 2016Leave a comment

Am I the only one who feels bombarded by coconut lately? It seems that coconut has replaced kale in the past year as a foodie favorite. People are eating it as coconut oil, drinking it as coconut milk or coconut water, and even wearing it...to moisturize hair and skin. I can't escape it as coconut … Continue reading Nuts Over Coconut: Is It Really Heart Healthy?

Why I Love Bliss Balls

March 10, 2016July 16, 2017Leave a comment

If you're an Instagrammer and search the hashtags #healthysnack or #energysnack, you may be surprised to see photos of little dough-like balls instead of the expected fresh fruit or protein bars. They have various names—bliss balls, energy bites, energy balls. I find them to be truly blissful for two reasons: 1. They're easy to make, quick … Continue reading Why I Love Bliss Balls

Surprised it was tasty. Baked tofu edamame black lentils kale cucumber tzatziki dressing👌 Most handsome best friends Rockwell & Cusco 🌈 Jake Class of 2025! 🥹🥰❤️🥳🧡🥲 not without struggle but you always pull ahead stronger. You are everything you need to be at this moment. You're my constant inspiration! On a noodle kick since Lunar New Year when I was celebrating with lo mein, chow fun, flat rice noodles etc..! 🍜 Easy: I just mix a stir-fry sauce with cooked noodles and add whatever's in the fridge. This has Gardein be'f tips, bok choy, sesame seeds and lots of green onion Really tired of storebought cookies that taste cheap, and wanted something without added sugar or artificial sweetener. Revisited these no-cook energy bites w stuff in my kitchen: PB, cashews, Fiber One cereal, oats, ground flaxseed, mini dark choc chips, and gifted dates I haven't used since Christmas. Also had out a beautiful jar of honey from my beekeeper friend @anaandmike🐝 but they didn't need extra sweetness today 🙂 Try these frozen! First time trying @lifealivecafe - wow so so good. Autumn Falafel and Green Goddess. I'm kinda bored with "healthy" vegan bowls that are so-so but these sauces and seasonings were seriously yummy 🤤 💯 Did you catch it? 😎 #eclipse2024 #bostoneclipse2024 #boston At least they’re being honest 🤷🏻‍♀️ Ahh-mazing Boston sunset last night pre-Lee caught by @sashbayat 🌅🧡💛❤️
