Where’s the Protein?

October 17, 2021November 20, 20216 Comments

I talk a lot about protein in the clinic. It’s a major macronutrient; "macro" means that our bodies need it every day because it's essential for almost every cell in the body to function. Protein is used to make muscles, skin and hormones. In some cases, people get too much protein: maybe fitness-minded folks who … Continue reading Where’s the Protein?

Chickpea Almond Salad

April 18, 2021April 18, 20213 Comments

I love mayo unlike a lot of people, so the pic from this recipe from createmindfully.com caught my eye. It looked like a hearty chicken salad sandwich -- except it was vegan. I doubted a mixture of tahini and mashed chickpeas could taste like chicken salad but I was wrong! When everything blended together, it … Continue reading Chickpea Almond Salad

Vegan Lasagna?

November 29, 2020November 29, 20202 Comments

Are you a lasagna person? I ate my fair share of lasagna growing up. The traditional type with lots of rich creamy ricotta, mozzarella and parmesan. Later on I was perfectly content with a lower fat recipe using cottage cheese from an early favorite cookbook, Quick & Healthy Recipes. And then I saw this recipe … Continue reading Vegan Lasagna?

Maple Dijon Tempeh with Roasted Fall Vegetables

November 20, 20204 Comments

This Thanksgiving will be unusual, with Covid-19 causing most of us to trim our gatherings in half or less. It's a bummer but we've been cloistered for most of the year already, postponing vacations and other travel, so maybe mentally we're prepared? Still, I love the holiday season and plan to do everything else I … Continue reading Maple Dijon Tempeh with Roasted Fall Vegetables

Stuffed Portobellos

October 17, 2019October 17, 2019Leave a comment

Whatever's in my supermarket produce aisle inspires my next dish—this time it was large, perfectly round portobello mushroom caps. I know some people hate mushrooms, maybe a texture thing, but I grew up eating them. My mom often had a bowl of dried mushrooms soaking in its brown liquid that she'd toss into a vegetable … Continue reading Stuffed Portobellos

Super Easy Vegan Weeknight Meal

September 19, 2019January 10, 2021Leave a comment

I try to fit in some meal prep on Sundays for the upcoming week, like prepping vegetables, baking marinated tofu or tempeh, or cooking a batch of whole grains. I'm always grateful during the week when I can quickly heat up a comforting homemade meal. But there are some weekends I don’t feel like meal … Continue reading Super Easy Vegan Weeknight Meal

My coworker's 4 week old new puppy Tucker 🥹🧡❤️ ...reminds me to wind down for the weekend, let go of work, and enjoy our blessings! Take a break from eating! 🍽️ Are you always snacking between meals? Do you graze right before bed? Could look at this all day 😵‍💫 The @mitmuseum was beyond my brain capacity but a nice Sunday afternoon outing (free parking), open until 5pm and tasty eateries all around 😋 Super impressed with @pressedcafe 👉Newton/Needham line. Big menu, plenty of vegan and lower-carb options, huge space with energetic vibe, and staff were amazing. Fast, attentive, constantly walking around checking on people. It's fast casual but with waitstaff! I'm not Catholic but appreciate both the immenseness and minuteness in detail in their churches. Some call it too ornate but really even the most grande are only a speck of God's magnificence Even as a dietitian and diabetes educator, I was perplexed. Realized that diet, exercise, and body size were only part of it. Vegetarian options at "regular" restaurants rarely taste good, but this was 💯👉quinoa bowl @taverninthesquare The ultimate pink explosion experience just outside Boston🩷🌸🧁🎀🩷! You'll get a private room for delicious afternoon tea (60+ varieties) with sammies, scones, and mini pastries in an impeccable setting - Sarah the owner prides herself on detail and a personalized experience. They book 3 weeks out and 4+ weeks for Sat/Sun Sesame tofu
