Vegetarian Tikka Masala

December 6, 2020January 10, 20213 Comments

Something essential to homecooked meals is a good sauce! Whole grains, cooked vegetables, salads, and proteins are full of nutrition but need extra flavoring to make you want to eat them again, right? I'm always on the lookout for sauces, marinades, and dressings that aren't loaded with added sugar and salt because I counsel so … Continue reading Vegetarian Tikka Masala

Stuffed Portobellos

October 17, 2019October 17, 2019Leave a comment

Whatever's in my supermarket produce aisle inspires my next dish—this time it was large, perfectly round portobello mushroom caps. I know some people hate mushrooms, maybe a texture thing, but I grew up eating them. My mom often had a bowl of dried mushrooms soaking in its brown liquid that she'd toss into a vegetable … Continue reading Stuffed Portobellos

Roasted Sweet Potato, Beet & Bean Spread

March 12, 2018March 12, 20182 Comments

If you enjoy hummus, you'll probably like this recipe. Hummus is on my weekly shopping list, but it does get boring after a while. This is a very easy recipe and fun alternative to hummus. And it's versatile. You can use it as a dip for chopped vegetables, a protein-rich breakfast toast topper, a spread … Continue reading Roasted Sweet Potato, Beet & Bean Spread

Broccoli Sauce, No Waste

February 9, 2017February 9, 2017Leave a comment

Eating vegetables are supposed to make you feel good, right? Then why do I feel guilt? Because if you look at the picture of the broccoli below, you'll see that for years I used to throw away those beautiful green stems. Not only broccoli, it's the seeds and pulp of winter squashes and tomatoes; scrapings … Continue reading Broccoli Sauce, No Waste

Brussels Sprouts Chips

December 27, 2016December 28, 20166 Comments

In the past when I've prepared Brussels sprouts, usually for roasting, I end up with a small mountain of outer leaves ready to be tossed in the trash. The leaves, stems, seeds and peelings of vegetables are my one regret in moving towards a mostly plant-based diet. I'm not yet ready for the commitment of … Continue reading Brussels Sprouts Chips

Red Lentil Butternut Squash Soup with Turmeric

September 18, 2016September 19, 20162 Comments

Whenever I go on vacation I wonder if I'll be able to find my usual favorite plant-rich meals. Thankfully on this summer's trip I discovered a popular cafe The Golden Pear that became my mainstay for lunches. My favorite dish there was a wonderfully hearty but simple vegan soup with red lentils and butternut squash. Not many … Continue reading Red Lentil Butternut Squash Soup with Turmeric

Surprised it was tasty. Baked tofu edamame black lentils kale cucumber tzatziki dressing👌 Most handsome best friends Rockwell & Cusco 🌈 Jake Class of 2025! 🥹🥰❤️🥳🧡🥲 not without struggle but you always pull ahead stronger. You are everything you need to be at this moment. You're my constant inspiration! On a noodle kick since Lunar New Year when I was celebrating with lo mein, chow fun, flat rice noodles etc..! 🍜 Easy: I just mix a stir-fry sauce with cooked noodles and add whatever's in the fridge. This has Gardein be'f tips, bok choy, sesame seeds and lots of green onion Really tired of storebought cookies that taste cheap, and wanted something without added sugar or artificial sweetener. Revisited these no-cook energy bites w stuff in my kitchen: PB, cashews, Fiber One cereal, oats, ground flaxseed, mini dark choc chips, and gifted dates I haven't used since Christmas. Also had out a beautiful jar of honey from my beekeeper friend @anaandmike🐝 but they didn't need extra sweetness today 🙂 Try these frozen! First time trying @lifealivecafe - wow so so good. Autumn Falafel and Green Goddess. I'm kinda bored with "healthy" vegan bowls that are so-so but these sauces and seasonings were seriously yummy 🤤 💯 Did you catch it? 😎 #eclipse2024 #bostoneclipse2024 #boston At least they’re being honest 🤷🏻‍♀️ Ahh-mazing Boston sunset last night pre-Lee caught by @sashbayat 🌅🧡💛❤️
