Nachos for Dinner!

January 10, 2021January 10, 20213 Comments

Who doesn't love nachos? They're a surefire crowd-pleaser and easy to prepare. All the toppings can be really heavy though, so I wondered if there was a way to make them easier on the stomach. I came up with this lighter recipe, more for everyday noshing than for guests. They actually make a great meal … Continue reading Nachos for Dinner!

Vegetarian Tikka Masala

December 6, 2020January 10, 20213 Comments

Something essential to homecooked meals is a good sauce! Whole grains, cooked vegetables, salads, and proteins are full of nutrition but need extra flavoring to make you want to eat them again, right? I'm always on the lookout for sauces, marinades, and dressings that aren't loaded with added sugar and salt because I counsel so … Continue reading Vegetarian Tikka Masala

Maple Dijon Tempeh with Roasted Fall Vegetables

November 20, 20204 Comments

This Thanksgiving will be unusual, with Covid-19 causing most of us to trim our gatherings in half or less. It's a bummer but we've been cloistered for most of the year already, postponing vacations and other travel, so maybe mentally we're prepared? Still, I love the holiday season and plan to do everything else I … Continue reading Maple Dijon Tempeh with Roasted Fall Vegetables

Best Snacks for Diabetes

August 17, 2020August 17, 20201 Comment

About half the people I see in the clinic have some form of diabetes: prediabetes, type 1, type 2, gestational, or even a rarer type 1.5. The nutrition prescription for all of them shares one similarity—watch the total carbs. Carbohydrates are the one macronutrient that most affects changes in blood sugar (proteins and fats are … Continue reading Best Snacks for Diabetes

Vegan Cream of Mushroom Soup

May 15, 2020January 10, 20216 Comments

The sun is getting brighter, the air is breezy and sweet, and we're just moving away from soup season. But my mind is still reflecting on so-called immune-boosting foods from the last post! Although total diet quality likely matters more than loading up on a single "superfood," there are special foods worth exploring. Mushrooms are … Continue reading Vegan Cream of Mushroom Soup

Stuffed Portobellos

October 17, 2019October 17, 2019Leave a comment

Whatever's in my supermarket produce aisle inspires my next dish—this time it was large, perfectly round portobello mushroom caps. I know some people hate mushrooms, maybe a texture thing, but I grew up eating them. My mom often had a bowl of dried mushrooms soaking in its brown liquid that she'd toss into a vegetable … Continue reading Stuffed Portobellos

Dietitians can be weird - what brings us joy 😂 Have intense sugar cravings? Maybe the day starts with a donut and iced caramel coffee, followed by afternoon Kit Kats, and Häagen-Dazs ice cream with cookies after dinner... then guilt sets in. What's the fuss about low-carb 🤔 My coworker's 4 week old new puppy Tucker 🥹🧡❤️ ...reminds me to wind down for the weekend, let go of work, and enjoy our blessings! Take a break from eating! 🍽️ Are you always snacking between meals? Do you graze right before bed? Could look at this all day 😵‍💫 The @mitmuseum was beyond my brain capacity but a nice Sunday afternoon outing (free parking), open until 5pm and tasty eateries all around 😋 Super impressed with @pressedcafe 👉Newton/Needham line. Big menu, plenty of vegan and lower-carb options, huge space with energetic vibe, and staff were amazing. Fast, attentive, constantly walking around checking on people. It's fast casual but with waitstaff! I'm not Catholic but appreciate both the immenseness and minuteness in detail in their churches. Some call it too ornate but really even the most grande are only a speck of God's magnificence Even as a dietitian and diabetes educator, I was perplexed. Realized that diet, exercise, and body size were only part of it.
